Easy Chicken Recipe in Just 7 Steps

So here goes, this has been my closely guarded easy chicken recipe.  I developed this method when I was in high school.  Back then I was always on the go and was always involved in some kind of sport.  My body craved the carbs, fat and protein, but sometimes my parents just did not cook up the most healthy foods.  I LOVE chicken.  Let me say that again, I LOVE chicken.  So I had to come up with a low fat, easy way to cook up chicken.  One where there was not much of a chance that I would burn the chicken, seal in the moisture and would have a juicy tasty meal.

I got the idea one day after watching my mom steam some vegetables.  So later that night I left for my part time job.  I worked at a grocery store at the time and while I was walking up and down the aisles, it dawned on me – my easy chicken recipe.

Right before I left that night I grabbed a couple of things that would soon be my easy chicken recipe that I could share with others as well as my family.  What I bought at the store was:

1 tray of chicken breasts

Lemon Pepper Seasoning

What I needed from home was:

1 medium sized pot with a lid

1 metal strainer

Tin Foil

Water

That’s it!  How simple is that?  Easy enough?  Think you could make your own chicken this way?  Its very simple.  So here are the directions for making my easy chicken recipe:

Step 1:  Place one chicken breast on a piece of tin foil large enough that it can get wrapped completely.

Step 2:  Season with your favorite seasoning, mine happens to be lemon pepper, you can also add       some      butter if you want.

Step 3:  Wrap the chicken in the foil

Step 4:  Fill your pot with water and place the metal strainer in the pot, be sure that there is not too much     water in the pot that it goes higher than the bottom of the strainer.  Bring water to a boil.

Step 5:  Place your wrapped chicken breast in the strainer and cover with lid.

Step 6:  Steam until chicken is cooked, usually around 10-15 minutes.  Cooking times may vary depending     on size of the chicken breast.  After the first time you make this easy chicken recipe you will see     how much time is needed.

Step 7:  Enjoy your easy chicken recipe with your favorite side dish!

The one thing you will find is that your chicken will be tender and moist.  It will also be a snap to clean up -all you have to do is wash the pot and strainer.  You may also want to experiment with the time and amount of water and different seasonings as these variables will enhance your easy chicken recipe.  Enjoy!

Mongolian Chicken

Ingredients:

2 tsp. peanut oil, 1/4 tsp. salt, 1/4 tsp. sugar, 2 tsp. cornstarch, 10 ounces boneless skinless chicken breasts, 1/2 tsp. minced garlic, 2 tsp. freshly ground chillies, 1/2 tsp. finely chopped onions, 2 tsp. cold water, 2 tsp. sugar, 1 tbsp. peanut oil, 1 tbsp. shaoxing rice wine or dry sherry, 1/3 cup chicken broth, 1 tsp. dark soy sauce, 4 dried Chinese mushrooms, 1/2 small red bell pepper cut 1-inch triangles, 3 spring onions mainly white cut into 2″ lengths, 1/2 tsp. cornstarch, 2 tsp. cold water for thickening, 1 tsp. sesame oil, 2 tsp. ground bean sauce (mo si jeung), 10 oz boneless skinless chicken breasts (cut on diagonal into 1/4″ thick by 2″ long slices, 4 Chinese dried mushrooms (soaked in warm water for 45 minutes, rinsed, water squeezed out, stems discarded, caps halved)

Method:

1. Mix the marinade ingredients together and marinate the chicken while you prepare all of the other ingredients for cooking.

2. Mix together the garlic, chilis, and onion. Combine the ground bean sauce, water, and sugar.

3. Heat a wok, add the groundnut oil, and swirl the surface with oil.

4. Stir-fry the garlic mixture for 5 seconds.

5. Add the ground bean sauce mixture and stir-fry for 5 seconds.

6. Add the rice wine and combine. Pour in the broth then the dark soy sauce and stir to combine.

7. Add the chicken, mushrooms, bell peppers, and scallions.

8. Stir-fry over high heat for 2 to 3 minutes. Then, reduce the heat a little, and stir in the thickening mixture for a few seconds.

9. Finally, add the sesame oil, which will impart a beautiful fragrance and richness to the dish.
serve hot over rice

Anyone concerned with getting fit, staying fit, or fitness in general is usually looking for ways to eat more healthfully. Chicken breasts are one of the most diet friendly lean protein sources you can find and they do taste pretty good. Lean protein sources are extremely important for all fitness enthusiasts. Lean protein builds muscle and helps to burn fat. Here’s a low fat healthy chicken recipe that you can vary to suit your mood.

Andy’s Famous Chicken

3lbs. package of boneless, skinless chicken breasts – still frozen

1 12oz. bottle of fat free italian salad dressing or Lawry’s marinade

1 11 x 14 baking pan

Preheat oven to 400 degrees. Place frozen chicken breasts in the baking pan. Pour dressing or marinade over frozen chicken. Bake chicken at 400 degrees for about 1 to 1 1/2 hours or until chicken is lightly browned on top.

That’s it! That’s the whole healthy low fat chicken recipe. This chicken recipe is dead easy and especially wonderful when you want a nice dinner but you have piles of chores left to do and don’t want to be chained to the stove all evening. Serve Andy’s Famous Chicken with side dishes such as steamed veggies and brown rice or other whole grains and you have a fast, healthy meal that actually tastes good.

This healthy low fat chicken recipe is particularly good with fat free Italian dressing. Any fat free or low fat salad dressing may be used to maximize the flavor variations that are possible with this dish. Another good choice would be any flavor Lawry’s marinade since that brand tends to be lower in fat and calories.

For those folks who are not quite so fitness oriented, regular bottled dressing can be used and the resulting dish will be just as tasty. Another easy way to go would be canned or bottled curry sauce. It makes a great spicy dish.
